Mix the lemon juice and coffee in a saucepan.
Bring the mixture to boil.
Gently whisk the Dutch gel and granulated sugar in a separate bowl.
Pour the Dutch gel-sugar mixture into the boiling lemon juice-coffee mixture and stir for around 2 minutes.
Let the new mixture boil for a minute and turn off the heat source.
Transfer into 8-ounce jars and cool.
